To prepare this Baked Bass with Shrimp Sauce Recipe, first clean and wipe the fish well and wash inside and out with salad-oil and vinegar. Set on ice for an hour. Cut half a pound of rindless salt pork into very thin slices; lay half on the bottom of the bake-pan, put the fish on them, and then spread the rest of the pork on top of the fish. Pour a little hot water in the pan, cover, and bake for an hour. Baste two or three times with butter and water. Turn out on a hot dish, and set where it will keep hot while you make the gravy.
Shrimp Sauce for Baked Bass
Make a roux of a tablespoonful of butter and 1 of browned flour; stir this into the gravy left in the pan. Add 4 tablespoonfuls of boiling water, the juice of half a lemon, cayenne to taste, and half a can of finely chopped shrimps.
Boil for a moment, pour some upon the fish, turn the rest into the gravy-boat.

Rolled Fillets Of Bass Baked Recipe
To prepare this Rolled Fillets Of Bass Baked Recipe, first remove the flesh from the bass in two fillets (as is described in the preceding recipe). Put the fillets in a dish, squeeze over them the juice of half a lemon, put slices of onion between, and set them aside in a cool place until ready to cook. Then roll the fillets, separately and loosely; into turban shapes, put bits of salt pork over them, and set to cook in a hot oven. After four or five minutes baste with salt pork fat and reduce the heat. Let cook about twenty minutes, basting five times. Leave two tablespoonfuls of the fat in the pan after the fish has been taken out; add to this two tablespoonfuls of flour and one-fourth a teaspoonful, each, of salt and pepper, and cook until frothy, then add a cup of broth made from the bones, bits of onion, parsley and a few slices of carrot, and cook until boiling. Add two tablespoonfuls of capers or fine-chopped cucumber pickles. Serve in a fish boat or bowl.
